Lanzhou beef noodles (兰州拉面) are almost always halal — run by Chinese Muslims (Hui people). Look for the Arabic script on the sign.

Beijing (Niujie Mosque area), Xi'an (Muslim Quarter), Lanzhou, Urumqi, Chengdu, and Shanghai all have excellent halal food scenes.
实用用语
I'm Muslim = 我是穆斯林. No pork = 不要猪肉. Halal = 清真. These three phrases will get you far.
